Pea and Corn Fritters
10 minute pea & corn fritters - Perfect for the lunchbox when your kids aren't enjoying sandwiches this or keep to enjoy yourself. Suitable for all in the family.
Ingredients
1/2 Cup Self Raising Flour
1 1/2 cups frozen peas
1/2 sweet corn
Pinch of salt
2 Eggs
Method
In a blender or food processor, blend 1 cup of frozen peas, 2 x eggs and flour. Blend until it’s like a thick green shake consistency.
Transfer to bowl and add in extra peas and corn 🌽 and mix together.
Heat olive oil in fry pan, once hot add the fritter batter and cook on each side for 2 minutes or until they golden brown.
Drain excess oil after fritters are cooked with paper towel.
Serve with a side of yoghurt and mint, either warm or cold.
Makes 8-10 fritters and they can be kept in a airtight container for 3-4 days in the fridge
