Easy Veggie Slice

This easy to make veggie slice is the perfect toddler snack or healthy lunchbox filler.

What's great is that you can make it ahead and keep it in the freezer.  Put it in the lunchbox in the morning and it will be perfectly defrosted by mid morning. 

Ingredients:
- 1 large zucchini, grated
- 1 cup of sweet potato, grated (or tinned corn), I had half a carrot so I also added this grated
- 5 rashers bacon, diced (I used ham)
- 1 brown onion, diced
- 1 cup tasty cheese, grated
- 5 eggs, whisked
- 1 cup SR flour
- Salt & Pepper

Method

1. Preheat oven to moderate, 180°C.
2. Lightly grease a 20 x 30cm slice pan. Line base and two long sides with baking paper.
3. In a large bowl, whisk together eggs and milk. Stir in zucchini, corn kernels, capsicum, cheese, flour and basil. Season to taste.
4. Pour into prepared pan. Bake for 30-35 minutes, until golden and firm. Cool in pan. 
Cut and serve on BIBO Tableware or keep fresh in a BIBO Silicone Bento Lunchbox
