Healthy Mac N Cheese Bites

These are super easy to make and perfect for toddlers and also a healthy snack to include in the lunchbox for older children.

250g macaroni, roughly chopped
150g pumpkin, peeled and roughly chopped
150g capsicum
1 1/2 cup tasty shredded cheese

How to make?
1. Preheat oven to 180°C. Line a muffin pan tin.

2. Cook macaroni according to packet directions. Drain and set aside to cool.

3. Meanwhile, steam pumpkin and capsicum over boiling water for 15 minutes or until soft. Transfer to a blender and blitz until smooth.

4. Stir together vegetable mixture, macaroni and cheese in a large bowl. Divide mixture into muffin pan and bake for 20 minutes or until golden brown.

What we used in the recipe was our non stick placemat which is great for cooking and our suction bowls for separating the veggies.
